Cider is the traditional use for heirloom apples and a way to preserve and store the harvest. Brewing cider is similar to brewing wine. Different varieties of apples are crushed and pressed to extract the juice. After fermentation with choice cider yeasts and a long period of aging, the unique flavors of the fruits age and develop into a specialty heirloom cider.

Distilling refines a cider or fruit wine into a finished brandy spirit. We are experimenting with distilling to push the properties and flavors of our ingredients to their limits and create unique spirits with our traditional techniques and ingredients.
